Bean Paste Pork Loin Strips (豆瓣酱猪柳) – Song-Cho Ideal Wok (松厨IDEAL万用锅)

A yummy pork dish using Song-Cho Multiply Stainless Steel Ideal Wok! Great with rice!

Serves 4

Ingredients:

  • Pork Loin 300g (washed & cut into strips)
  • Black Fungus 4 pcs (soaked till soft, drained & sliced)
  • Ginger 1 inch (finely chopped)
  • Garlic 3 pcs (finely chopped)
  • Spring Onion 2 pcs (chopped finely, separate the green with the white)
  • Chili Bean Paste 1 tbsp
  • Oil a little for stir-frying
  • Red Chili 1 pc (remove seeds & cut into thin strips)

Seasoning (mix into a bowl):

  • Dark Soy Sauce 1 tbsp
  • Sugar 3 tbsp
  • Black (Zhenjiang) Vinegar 3 tbsp
  • Rice Wine 1 tbsp
  • White Pepper a little to taste
  • Cornstarch water 2 tsp
  • Water 2 tsp

*You may make changes to the ingredients and/or adjust the quantity according to personal preference.

Steps:

  1. Marinate the pork strips with 1 tbsp dark soy sauce, ½ tsp salt, 1½ tbsp cornstarch water for an hour.
  2. Add oil into Ideal wok before the wok heats up, turn on high heat. Add marinated pork strips, lower to medium heat & stir-fry till about 70% cooked.
  3. Add chili bean paste, ginger, garlic, spring onion (white portion), black fungus and stir-fry till well mixed.
  4. Add seasoning, continue to stir-fry, add spring onion (green portion), mix well. Add some water if it is too dry & turn to low heat.
  5. Add chili strips, mix well, served hot.

供4人份

材料:

  • 猪里脊 300克 (洗净, 切成柳条状)
  • 黑木耳 4朵 (浸泡至软, 切丝)
  • 姜 1吋 (剁碎)
  • 蒜蓉 3瓣
  • 青葱 2条 (切粒, 把青与白部分分开)
  • 辣豆瓣酱 1汤匙
  • 油 少许
  • 红辣椒 1条 (取出籽, 切丝)

调味料 (混合入一个碗内):

  • 酱油 1汤匙
  • 糖 3汤匙
  • 浙江黑醋 3汤匙
  • 米酒 1汤匙
  • 白胡椒粉 少许
  • 生粉水 2茶匙
  • 水 2茶匙

*可随个人喜好, 调整材料和用量

做法:

  1. 先把猪柳腌制约1小时 (酱油1汤匙, 盐 ½ 茶匙, 生粉水1½汤匙, 油少许)
  2. 冷锅下油, 开大火, 加入腌好的猪柳条炒至7分熟, 当中回中火
  3. 加入辣豆瓣酱, 姜, 蒜蓉, 青葱 (白的部分), 黑木耳丝, 翻炒均匀
  4. 加入调味料, 继续翻炒, 然后加入青葱 (青的部分) 炒均匀, 如果太干可加入一些水, 回小火
  5. 加入红辣椒丝拌匀就可盛盘趁热享用
