Braised Chicken w/o Water (无水焖鸡) – Song-Cho Electric Pressure Cooker SC-EP5 (松厨电压力锅)

Braising chicken without water using Song-Cho Electric Pressure Cooker (SC-EP5), yumz!

Serves 4

Ingredients:

  • Whole Chicken 1.5kg 1 pc (washed & pat dry)
  • HuaDiao Wine 2 tbsp
  • Dark Soy Sauce 1 tsp
  • Oyster Sauce 2 tbsp
  • Five Spice Powder ½ tsp
  • Salt ½ tsp
  • Sesame Oil 1 tsp
  • *Spring onion or ginger a few pieces (for layering the bottom) – video did not show this

Steps:

  1. Pour all seasoning onto the chicken, rub the chicken with the seasoning and leave it in a fridge overnight.
  2. Next day, place some cut spring onion or ginger pieces at the bottom of the Electric Pressure Cooker Pot to prevent the bottom chicken skin from burning or getting charred – video missing this step.
  3. Place the seasoned chicken (breast meat face down) on top of the spring onion/ginger pieces, pour the seasoning liquid onto the chicken.
  4. Close the lid and ensure the pressure cooker is properly locked and balancing weight is properly placed.
  5. On the power, press “Braised chicken without water” function (default 15 minutes cooking time AFTER sufficient pressure is formed).
  6. When it is done, the control panel will indicate “bb” text and it goes into a keep warm stage. Press “Cancel” button and turn off the power. *This is an important step to ensure the pressure is released faster.
  7. When the indicator drops (IMPORTANT), it is ready. Open the lid, remove the chicken and drizzle the sauce over the chicken and enjoy!

  • 全鸡 1.5公斤 1只 (洗净抹干)
  • 花雕酒2汤匙
  • 黑酱油1茶匙
  • 蚝油2汤匙
  • 五香粉半茶匙
  • 盐半茶匙
  • 麻油1茶匙
  • *葱段或厚姜片 一些 (拿来垫底) – 视频没有这一步

做法:

  1. 将所有调味料涂抹在鸡身上, 放入冰橱腌隔夜.
  2. 第二天, 将葱段或厚姜片放入电压力锅子内当作垫底以免锅底的鸡皮焦黑 (视频没有这一步).
  3. 再将鸡 (鸡胸肉朝下) 放在葱段或厚姜片上, 倒入酱汁.
  4. 盖上锅盖, 确认盖子已锁好, 配重头戴正.
  5. 开电源, 按 “Braised chicken without water” (无水焖鸡) 功能 (默认烹煮时间在气压饱和后为15分钟)
  6. 烹煮程序完成后, 显示板会出现 “bb” 字样, 此时按 “Cancel” (取消) 键, 关掉电源. *这是个重要的步骤能使压力比较快减低.
  7. 当指示阀下降后 (重要), 打开锅盖把鸡取出, 淋上酱汁便可享用.
