Stuffed Squid with Sticky Rice, IKAMESHI (乌贼饭) – Magic Quick Cook Pressure Cooker (松厨魔法气压锅)

Simple yummy Japanese-style stuffed squid using SONG-CHO Magic Quick Cook Pressure Cooker. Just 5 minutes!

Serves 2 to 4

Ingredients:

  • Squid, medium size 4 pcs
  • Glutinous rice 2 cups (soak overnight and drain)
  • Peanuts 60g

Seasoning:

  • Chicken stock 400ml
  • Japanese Soy Sauce 4 tbsp
  • Sake 2 tbsp
  • Mirin 1 tbsp
  • Sugar 2 tbsp
  • Chili padi 1 pc (remove seeds, cut into small pieces)

Steps:

  1.  Wash and remove the innards/bone of the squid. Separate the head from the body. Mince the tentacles into small pieces.
  2.  Add peanuts and minced tentacles into the drained (soaked) glutinous rice.
  3.  Stuff the rice content into the squid 2/3 full and secure the opening with a toothpick.
  4.  Add the seasoning into the Magic Quick Cook, bring it to a boil and add stuffed squid. Pressure cook for 5 minutes.
  5.  Open the lid when the indicator dropped and bring it to a boil till the sauce reduces slightly. Drizzle the sauce over the stuffed squid at the same time.
  6.  Remove the squid when ready, slice, drizzle with sauce and serve.

材料:

  • 乌贼中型 4 只
  • 糯米 2杯 (浸泡隔夜然后沥干)
  • 花生60克

调味料:

  • 高汤400毫升
  • 日式酱油 4汤匙
  • 清酒 2汤匙
  • 味琳 2汤匙
  • 白糖 2汤匙
  • 小辣椒 1根 (取籽切细)

做法:

  1.  把乌贼洗净, 去除内脏. 再把头部和身体分开, 把乌贼触手剁碎.
  2.  将花生和剁碎的乌贼触手倒入浸泡好的糯米拌匀.
  3.  将拌匀的糯米塞入乌贼内约2/3 满, 用牙签刺入开口处封密即可.
  4.  把调味料倒入魔法气压锅里煮滚, 将塞好的乌贼放入锅内, 高压煮5分钟.
  5.  等到指示阀下降后, 开盖将汤汁煮到稍微收干即可. 同时在煮的过程中, 不时把酱汁淋在乌贼上给它上色.
  6.  把煮好的乌贼取出, 切片淋上酱汁即可享用.
