Beef Rendang (冷当咖喱牛肉) – Magic Quick Cook Pressure Cooker (松厨魔法气压锅)

Try this spicy tender Beef Rendang recipe using SONG-CHO Magic Quick Cook Pressure Cooker. Just 25 minutes! *Use BEEF/MUTTON function when using Song-Cho 5L Electric Pressure Cooker.

Serves 4

Ingredients:

  • Beef 1kg (wash & cut into thick chunks)
  • Kaffir Lime Leaves 6pcs
  • Garlic 6 cloves (finely chopped)
  • Shallots 6 pcs (finely chopped)
  • Lemongrass 1 stalk, lower portion
  • Galangal 1 inch (finely chopped)
  • Ginger 1 inch (finely chopped)
  • Curry Powder 2½ tsp
  • Chilli Powder 3 tbsp
  • Spice 1 pkt (ready-packet)
  • Coconut Milk 700ml
  • Sugar ½ tsp
  • Salt ¾ tsp

*As pressure cooker retains moisture well, reduce the liquid measurement of your recipe accordingly where needed.


Steps:

  1.  Add oil into the Magic Quick Cook follow by chopped garlic, shallots, garlic, galangal and ginger, fry till fragrant.
  2.  Add beef chunks, mix well and add the lime leaves, continue to stir.
  3.  Add curry and chilli powder, mix well. Pour coconut milk, mix well.
  4.  Add sugar, salt, spice packet and lemongrass, stir well and bring it to a boil.
  5.  Close/lock the lid. Cooking time is 25 minutes (timing starts only when the balancing weight rocks). If you prefer a more textured beef, cooked for 20 minutes.
  6.  Once the indicator drops (IMPORTANT), open the lid. Remove the beef from the Magic Quick Cook, serve with rice.

材料:

  • 牛肉 1公斤 (洗净, 切稍大块)
  • 疯柑叶 6片
  • 蒜蓉6瓣
  • 小葱头 6粒 (剁碎)
  • 香茅1根, 下部
  • 莨姜1寸(剁碎)
  • 姜1寸(剁碎)
  • 咖哩粉 2½ 茶匙
  • 辣椒粉3汤匙
  • 香料1包 (现成包装)
  • 椰浆 700毫升
  • 白糖 ½ 茶匙
  • 盐 ¾ 茶匙

*由于气压锅能更好地把水分锁住, 如有自家食谱, 请调整/减少水分/液体用量

做法:

  1.  把蒜蓉, 小葱头, 莨姜和姜倒入加了油的魔法气压锅内爆香
  2.  加入牛肉块翻炒片刻, 加入疯柑叶, 继续翻炒
  3.  加入咖喱粉和辣椒粉, 翻炒均匀, 然后倒入椰浆拌匀
  4.  加入糖, 盐, 香料包和香茅, 让咖喱煮滚
  5.  盖上锅盖, 煮25分钟即可 (当配重头摇摆开始计时25分钟); 如喜欢稍有咬劲, 可煮20分钟即可
  6.  等到指示阀下降后 (重要!), 开盖取出冷当咖喱牛肉, 趁热与饭一起享用
