NONYA DELIGHT 娘惹新煮意: Kueh Lopez (三角椰丝糯米糕) – Magic Quick Cook (松厨魔法气压锅)

Let instructor Helen Lim of Kim Choo Kueh Chang demonstrates a yummy dessert, Kueh Lopez using SONG-CHO Magic Quick Cook!

Serves 4-6

Ingredients A:

  • Banana Leaves 1 bundle
  • Toothpick 1 small box

Ingredients B:

  • Glutinous Rice 500g
  • Lye Water 1 tbsp
  • Desiccated Coconut 200g
  • Salt A pinch

Ingredients C:

  • Palm Sugar 300g
  • Water 150ml
  • Pandan Leaves 3pcs

Steps:

  1.  Steam the desiccated coconut with a pinch of salt for 5 minutes and set aside (using Ideal Wok).
  2.  Boil Ingredients C till it forms a thick syrup in a pot, set aside.
  3.  Soak the glutinous rice for 1 hour, drain and mix with lye water.
  4.  Clean the banana leaves and cut into 7cm strips.
  5.  Wrap the glutinous rice into a triangular shape with the banana leaves, secure with a toothpick.
  6.  Fill half of Magic Quick Cook with water, add 1 tsp of salt. Boil the wrapped glutinous rice parcel in Magic Quick Cook for 8 minutes (start timing when the balancing weight starts to rock). *Normal pot for an hour.
  7.  Open the lid when the pressure indicator is down.
  8.  Take out the Kueh Lopez, unwrapped when cool. Coat with desiccated coconut and serve with palm sugar syrup.

材料A:

  • 香蕉叶 1 包
  • 牙签 1盒

材料B:

  • 糯米 500克
  • 枧水 1 汤匙
  • 干椰丝 200克
  • 盐 少许

材料C:

  • 椰糖 300克
  • 清水 150毫升
  • 香兰叶 3片

做法:

  1.  把少许盐加入干椰丝里蒸约5分钟后待用(利用IDEAL万用锅)
  2.  把材料C倒入汤锅中煮至浓稠后待用
  3.  把糯米浸泡1小时后,沥干并加入枧水拌匀
  4.  把香蕉叶洗净,剪成7公分长
  5.  把糯米加入卷成筒状的香蕉叶内, 用牙签封住香蕉叶开口
  6.  把魔法气压锅加了一半的水和一茶匙盐. 把包好的糯米放入魔法气压锅内8分钟(配重头开始摇摆才计时). *普通汤锅需1小时
  7.  指示阀降下后才开盖
  8.  把糯米取出待冷后裹上椰丝就可与椰糖浆一起享用了
