Pineapple Rice (黄梨饭) – Song-Cho Rice Cooker SC-FCM58 (松厨电饭锅)

Try using Song-Cho SC-FCM58 Rice Cooker to make this simple yet delicious Pineapple Rice!

Serves 4

Ingredients:

  • Rice 300g (2 cups, wash & drain)
  • Ripe Pineapple 150g (cut into small cubes)
  • Fried Shallots 1tsp
  • Garlic 3pcs (chopped finely)
  • Shallots 5pcs (chopped finely)
  • Turmeric Powder ½ tsp
  • Curry Powder ½ tsp
  • White Sugar 1½ tsp
  • Salt ½ tsp
  • Chicken Powder ½ cube
  • Light Soy Sauce 1tbsp (may use Fish Sauce)
  • Water
  • Cashew Nuts a little (stir-fry till fragrant, sprinkle on cooked rice)
  • Raisins 30g (sprinkle on cooked rice)
  • Bak Kwa 1 pc (cut into small pieces0
  • Coriander leaves for taste & garnish

Steps:

  1. Press MENU till REHEAT, press START.
  2. Add 2 tbsp oil, add shallots and garlic, spread them out and close the lid to let it fry for 1 minute.
  3. Open the lid and stir well. Add turmeric powder, curry powder and stir-well, close the lid for around 30 seconds.
  4. Open the lid, add rice and mix well.
  5. Add water (about 1cm above the rice), mix well (a little less water is required because pineapples release juice during cooking).
  6. Add seasoning: chicken powder cube, salt, sugar and light soy sauce, stir well.
  7. Add pineapple cubes onto the rice without stirring them.
  8. Close the lid, press CANCEL to stop the REHEAT function.
  9. Press MENU till COOK (1st function), press START –> it will take approximately 45 minutes to an hour (let it simmer for an extra 15-20 minutes when it is done, do not attempt to stir the rice during this time).
  10. When it is done, give the rice a good turn. Add raisin, cashew nuts, bak kwa pieces and fried shallots, mix well. Garnish with coriander leaves before serving.

  • 蒜头 3瓣 (切碎)
  • 小葱头 5粒 (切碎)
  • 黄姜粉  ½ 茶匙
  • 咖喱粉 ½ 茶匙
  • 白糖 1½ 茶匙
  • 盐  ½ 茶匙 (少许)
  • 鸡精块 ½ 块
  • 酱青 1汤匙 (可用鱼露)
  • 清水 适量
  • 腰果 适量 (炒香备用, 撒在煮好的饭上)
  • 葡萄干30克 (撒在煮好的饭上)
  • 肉干1片 (切小片)
  • 芫荽 点缀用

做法:

  1. 按MENU 键至REHEAT功能, 按 START 键
  2. 将2汤匙的油倒入内锅, 然后加入小葱头和蒜蓉, 把它们散开来, 关盖约一分钟让它们煮出香味
  3. 开盖拌匀, 加入黄姜粉和咖喱粉拌匀然后关盖约30秒
  4. 开盖加入米, 稍微翻炒一下
  5. 加入水, 水位约在米以上1公分 (由于黄梨会在烹煮时释放水分, 所以无需加入平时煮饭的水量)
  6. 加入调味料: 鸡精块, 盐, 糖和酱青, 搅拌均匀
  7. 最后加入黄梨块, 不搅拌
  8. 关盖, 按CANCEL键取消REHEAT功能
  9. 按MENU 键至COOK功能 (第一个功能), 按 START 键 –> 需约45分钟到1小时 (程序完成后让它继续焖煮15到20分钟即可, 不要试图翻搅)
  10. 完成后, 把饭翻搅一番, 然后加入葡萄干, 腰果, 肉干和炸葱头拌匀, 最后加入芫荽点缀即可享用
