SONG-COOKING 轻松厨房: Nonya Rice Dumpling (娘惹粽) – Magic Quick Cook (松厨魔法气压锅) & Ideal Wok (松厨Ideal平底万用锅)

Use Song-Cho Magic Quick Cook pressure cooker to kick-start the Dragon Boat Festival by making Nonya Rice Dumplings, cooking time is only 10 minutes!

Make about 15 Rice Dumplings

Marinate (A) – below is a guide, adjust according to your taste:

  • Oyster sauce 2tbsp
  • Dark soy sauce 1tbsp
  • Light soy sauce 1tbsp
  • White pepper 20g
  • Coriander power 40g (toast in advance if desired)
  • Salt 1tsp

(Optional: may marinate the pork belly with marinate A overnight)


  • Shallots 150g (cut into tiny bits)
  • Garlic 100g (cut into tiny bits)
  • Dried Chinese mushrooms 100g (soaked in hot water & cut into small pieces)
  • Sugared winter melon strips 300g (cut into small pieces)
  • Glutinous rice 1kg (soaked for an hour)
  • Pork belly 800g (cut into small pieces)
  • Pandan leaf 1 bunch (cut into strip approx 2″ x 0.5″)
  • Bamboo Leaves (wash & trim, where needed)

Steps (fillings):

  1. Pour oil into Ideal Wok before it gets heated up
  2. Add chopped shallots, stir fry till slightly translucent
  3. Add chopped garlic, stir fry; add chopped mushroom, stir-fry; add (marinated) pork belly, stir-fry
  4. Add seasoning – oyster sauce, dark soy sauce, light soy sauce, salt, white pepper, coriander powder and stir fry the mixture till cooked (may skip this step if the pork belly has been marinated with the seasoning overnight)
  5. Taste and add more seasoning (e.g. dark soy sauce, pepper, salt, coriander power) if required
  6. Add sugared winter melon strips last, stir fry into mixture till evenly spread out (for a few minutes)
  7. Remove from pot and into a container

 Steps (glutinous rice):

  1. Drain the soaked glutinous rice after an hour
  2. Add some salt and onion oil to taste and mix well (optional)

Steps (wrapping dumplings):

  1. Take 2 pieces of bamboo leaf (the smoother side should be facing up), twist it into a conical shape with the indent portion facing up
  2. Bottom layer – add some glutinous rice (pack it tightly)
  3. Mid layer – add some cooked filling
  4. Top layer – cover with some more glutinous rice (pack it tightly), place a piece of pandan leave on top
  5. Fold the leaf downwards and wrap around the dumpling
  6. Use a raffia or reed string to tie the dumpling tightly (the strings should be bundled on top portion and hanging down from a top area for easy tying)

Steps (cooking using Magic Quick Cook):

  1. Pour water into the pressure cooker up to half-way mark (able to cook about 15 dumplings)
  2. Without lid, boil the water till boiling point, lower the rice dumplings (approximately 15) into the boiling water
  3. Close the lid (arrow aligned and close it at clockwise direction); the pressure button will rise due to accumulated pressure within the pot
  4. When the balancing weight starts to rock, releasing steam, lower the temperature to medium heat and cook for 10 minutes
  5. After 10 minutes, turn off the heat. *Wait for the pressure button to lower before opening the lid (anti-clockwise)
  6. Lift the Nonya rice dumplings out from the pressure cooker, let it cool before serving

调料 (A):

  • 蚝油 2大匙
  • 酱油 1大匙
  • 酱清 1大匙
  • 胡椒粉 20克
  • 芫荽粉 40克 (可先稍烘烤过)
  • 盐 少许

(可用调料A将五花肉腌制隔夜, 也可不腌制)


  • 小葱头 150克 (剁碎)
  • 蒜茸 100克 (剁碎)
  • 香菇 100克 (浸泡后切小块)
  • 冬瓜条 300克 (切小块)
  • 糯米 1公斤 (浸泡1小时)
  • 五花肉 800克 (切小块)
  • 斑兰叶 1撮 (切面2”x0.5” 条状型)
  • 竹叶 (洗净,修剪)

做法 (内馅):

  1. 将油倒入IDEAL平底万用锅内 (冷锅下油)
  2. 将剁碎的小葱头倒入, 翻炒至稍透明
  3. 倒入蒜茸, 翻炒; 倒入香菇, 翻炒; 将五花肉倒入, 一起翻炒
  4. 然后加入蚝油,酱油,酱青,盐,胡椒粉,芫荽粉翻炒至熟透 (如用事先腌制的五花肉, 这加入调料步骤可省略)
  5. 试吃,如需,加入多些调味料 (如酱油,胡椒粉,盐,芫荽粉等)
  6. 将冬瓜条倒入,翻炒至混合均匀
  7. 将煮好的内陷从锅中取出,盛入碗内

做法 (糯米):

  1. 将浸泡好的糯米洌沥干水
  2. 加入盐和葱头油拌匀 (可不加)

做法 (裹粽子):

  1. 用两片粽叶 (正面比较光滑,包粽子时要正面向内), 粽叶交叉成漏斗状
  2. 底部 – 装入一层糯米 (糯米压实)
  3. 中部 – 装入内陷
  4. 顶部 – 再装入一层糯米(糯米压实), 放一片斑兰叶
  5. 顺势将粽叶压住糯米,包好粽子
  6. 再用绳子困扎紧粽子

做法 (利用8公升松厨魔法气压锅煮粽子):

  1. 将水倒入气压锅至一半水位 (可一次煮约15粒粽子)
  2. 用大火将水煮开 (无盖), 将粽子(约15粒) 放入锅内
  3. 将锅盖关上(箭头对准,顺时钟方向), 气压钮会随着锅内聚积的气压而上升
  4. 当配重头开始摇摆时, 用中火煮10分钟 (计时10分钟)
  5. 10分钟后熄火, *等到气压钮下降后才开盖 (逆时钟)
  6. 将粽子捞起, 等稍冷却后食用香喷喷的娘惹粽
