Let Chef FOONG TAN show you how to prepare the popular Carrot Cake using Song-Cho Magic Quick Cook pressure cooker and Ideal Wok.

Serves 2-3

Ingredients:

  • Rice Flour 300g
  • Wheat Flour (Starch) 20g
  • Corn Starch 20g
  • Radish 300g (cut into strips)
  • Chinese Sausage (lap cheong) 100g (cut into small pieces)
  • Dried Shrimp 100g (wash & drain)
  • Salt 1 tsp
  • Chicken Powder 1½ tsp
  • Sugar 2 tsp
  • Sesame Oil 1½ tsp
  • Water 1 litre
  • Sesame Seeds for garnish
  • Green Onion for garnish
  • Shallot Oil – a little to drizzle onto the ready carrot cake
  • Soy Sauce Seasoning – to drizzle onto the ready carrot cake

Ingredient (Soya Sauce Seasoning):

  • Light Soya Sauce 50g
  • Chicken Power 20g
  • Sugar 100g
  • Water 100g

Steps:

1) Add oil into Ideal Wok before it heats up. At high heat, add dried shrimp, lap cheong, radish, stir-fry for a minute, add water and let it simmer at medium/low heat.

2) While the radish is cooking, prepare the flour mix. In a bowl, add in 3 flour, salt, sugar, chicken powder, sesame oil and water, mix well till it thickens into a smooth paste.

3) Add the cooked radish mix into the flour paste, mix well and pour into a glass container.

4) Put a trivet inside the Magic Quick Cook, add water till it covers the surface of the trivet. Steam the carrot cake inside Magic Quick Cook for *10 minutes (20 minutes for standard pressure cooker).

5) When it is ready, remove from the pressure cooker. Garnish with sesame seeds, green onions, and drizzle shallot oil, soy sauce seasoning & serve while hot.

材料:

  • 粘米粉 300克
  • 澄面粉 20克
  • 太白粉 20克
  • 白萝卜丝 300克
  • 腊肠 100克 (切小丁)
  • 虾米 100克 (洗净沥干)
  • 盐 1茶匙
  • 鸡精粉 1茶匙半
  • 糖 2茶匙
  • 麻油 1茶匙半
  • 清水 1公升
  • 芝麻 点缀用
  • 青葱 点缀用
  • 葱头油 ~ 淋在蒸好的萝卜糕上
  • 酱青调味汁~ 淋在蒸好的萝卜糕上

材料 (酱青调味汁):

  • 酱青 50克
  • 鸡精粉 20克
  • 白糖 100克
  • 清水 100克

做法:

1) 冷锅下油, 开大火加入虾米, 腊肠和萝卜丝炒一下, 加入清水让它煮, 回中小火

2) 当白萝卜丝在煮时, 准备制作面糊。把三种面粉加入一个大碗里, 加入盐, 糖, 鸡精粉, 麻油和清水, 搅拌均匀成糊状。

3) 把煮好的白萝卜材料倒入面糊内,搅拌均匀然后倒入一个玻璃碗内。

4) 在松厨魔法气压锅内放入蒸架, 加水至蒸架表面。把装有萝卜糕的玻璃碗放入魔法气压锅内蒸*10分钟就行了 (一般气压锅约20分钟) 。

5) 把蒸好的萝卜糕从气压锅取出, 撒上芝麻, 青葱粒, 再淋上葱头油和酱青调味汁, 趁热享用。
