NONYA DELIGHT 娘惹新煮意: Assam Udang Nanas (亚参凤梨虾) – Song-Cho IDEAL Wok (松厨多层不锈钢IDEAL万用锅)

Let instructor Helen Lim show us how to make a refreshing Assam Udang Nanas using SONG-CHO multiply stainless steel IDEAL Wok. Goes well with rice!

Serves 4

Ingredients A:

  • Lemongrass 1 stalk (sliced thinly)
  • Shallots 300g
  • Garlic 20g
  • Turmeric 15g
  • Dried chillies 25g (deseeded and soaked in hot water till soft)
  • Fresh red chillies 3pcs
  • Roasted Belachan 20g
  • Galangal 15g

Ingredients B:

  • Tamarind (Assam) 100g
  • Water 250ml

Ingredients C:

  • Medium-sized prawns 500g (deveined)
  • Oil 150ml
  • Palm Sugar 100g
  • Salt ½ tsp
  • Oyster Sauce 1tbsp
  • Pineapple 100 g (sliced into bite-sized pieces)
  • Daun Limau Purut (lime leaf) 1 stalk

Steps:

  1. Blend ingredients A to form fine paste.
  2. Mix ingredients B and extract the juice.
  3. Add in 100 ml of oil into IDEAL wok before it gets heat up. Add the blended paste (1.) and stir-fry till fragrant.
  4. Add pineapple, lime leaves, oyster sauce, salt, tamarind juice (2.), cover the wok and let it simmer for another 5 minutes.
  5. Add prawns and palm sugar, mix well and let it bring to a boil. When the prawns are fully cooked, serve the dish with rice.

供4人份

材料A:

  • 香茅 1棵 (切成片)
  • 小葱头 300克
  • 蒜蓉 20克
  • 姜黄 15克
  • 辣椒干 25克 (去除籽, 并浸泡在热水到软)
  • 红辣椒 3条
  • 峇拉煎 20克
  • 蓝姜 15克

材料B:

  • 罗望子 (亚参) 100克
  • 清水 250毫升

材料C:

  • 中型虾 500克 (去除内脏)
  • 油 150毫升
  • 椰糖 100克
  • 盐 ½ 茶匙
  • 蚝油 1汤匙
  • 凤梨 100克 (切小块)
  • 柠檬叶 1支

做法:

  1. 把材料A混合捣碎成糊状
  2. 把材料B混合揉捏, 取亚参水
  3. 冷锅下约100毫升的油, 加入辣椒糊 (1.) 翻炒至香
  4. 加入黄梨块, 柠檬叶, 蚝油, 盐, 亚参水 (2.), 盖上锅盖让它焖煮5分钟
  5. 加入虾和椰糖, 炒拌均匀, 盖上锅盖让它焖煮至滚, 虾子熟透即可捞起盛盘配于白饭一起享用
