Let instructor Helen Lim show us how to make a fragrant and spicy Sambal Brinjal using SONG-CHO multiply stainless steel IDEAL Wok. Yummy!


Serves 4

Ingredients (A) – chili paste:

  • Roasted Belachan 15g
  • Shallots 35g
  • Garlic 10g
  • Candle Nuts 10g
  • Dried Chilies 5g (remove the seeds and soaked in hot water till soft)
  • Fresh Red Chilies 2pcs

Ingredients (B):

  • Brinjal 300g (cut into 4 cm long)
  • Oyster Sauce 1 tbsp
  • Palm Sugar 1 tsp

Ingredients (C):

  • Dried Shrimps 25g (soaked in hot water for 5 minutes, drained & pounded)
  • Oil for frying
  • Water
  • Bean Paste 2tsp



  1. Blend ingredients A to form a fine paste.
  2. In the Ideal wok, heat up oil and stir fry the dried shrimps till crispy and scoop aside leaving the oil in the wok.
  3. With the remaining oil, add in the blended paste and fry till fragrant.
  4. Thereafter, add in brinjal, crispy dried shrimps, sugar, bean paste and oyster sauce, mix well.
  5. Cover it up and simmer till brinjal is soft.
  6. Plate it and serve with hot rice.

材料 (A) – 辣椒糊:

  • 峇拉煎 15克
  • 小葱头 35克
  • 蒜蓉 10克
  • 石栗果仁 10克
  • 辣椒干 5克 (去籽后浸泡热水中至软)
  • 红辣椒 2条

材料 (B):

  • 茄子 300克 (切约4公分长)
  • 蚝油 1汤匙
  • 椰糖 1茶匙

材料 (C): 

  • 虾米 25克 (浸泡热水约5分钟后沥干捣碎)
  • 油 (备来炸茄子)
  • 清水 适量
  • 豆酱 2茶匙



  1. 把材料A混合捣碎成糊状
  2. 冷锅下油, 待油热后加入虾米翻炒至香捞起备用 (油留在锅内)
  3. 将之前捣好的糊倒入锅内翻炒至香
  4. 加入茄子, 炒香的虾米, 糖, 豆酱和蚝油翻炒均匀
  5. 盖上锅盖焖煮至茄子变软
  6. 盛盘即可享用
