Let Chef HOO CHEE KEONG show you how to prepare a classic Hakka dish, Yam Abacus Seeds using SONG-CHO Magic Quick Cook pressure cooker and IDEAL Wok.

Serves 4

Ingredients (yam abacus seed):

  • Yam pulp 200g
  • Tapioca Flour 100g
  • Salt ½ tsp

 Ingredients:

  • Dried Squid Strips 10g
  • Minced Pork 20g
  • Chinese Mushroom 10g (diced)
  • Minced Garlic 2 tsp (approx.)
  • Spring Onion a little (diced)
  • Sugar ¼ tsp
  • White Pepper a little to taste
  • Chicken stock ½ tsp
  • Oyster Sauce ½ tsp
  • Light Soy Sauce ½ tsp
  • Dark Soy Sauce a little to taste
  • Chicken Powder a little to taste
  • Sesame Oil a little to taste

Steps:

1) Remove yam skin, slice and steam it. Using the Magic Quick Cook and steam for 12 minutes (12 minutes when the balancing weight starts to rock).

2) Mashed the steamed yam finely, add water and tapioca flour into the minced yam, mix well and add a little salt to taste.

3) Pinch some yam dough and shaped it into abacus-like seeds.

4) In the IDEAL wok, boil some water, add the abacus seeds and cook them till they float; cook a bit longer and scoop them up. Put them into cold water, drain and set aside.

5) In the IDEAL wok, add oil before the wok is heated up. Add minced garlic, dried squid strips, minced pork, diced mushroom and fry till fragrant. Add chicken stock, oyster sauce, light soy sauce, dark soy sauce, white pepper, chicken powder, sesame oil and stir-fry well.

6) Sprinkle diced spring onion and plate it.

材料 (算盘子) :

  • 芋头肉 200克
  • 木薯粉 100克
  • 盐 半茶匙

 材料 (配料) :

  • 鱿鱼丝 10克
  • 猪肉碎 20克
  • 鲜冬菇粒 10克
  • 蒜蓉 少许
  • 葱花 10克
  • 糖 1/4茶匙
  • 胡椒粉 少许
  • 鸡汤 半茶匙
  • 蚝油 半茶匙
  • 生抽 半茶匙
  • 黑酱油 少许
  • 鸡精粉 少许
  • 麻油 少许

做法:

1) 芋头去皮切片蒸熟, 利用魔法气压锅蒸12分钟 (配重头摇摆后计时12分钟)。

2) 蒸熟后的芋头用叉按成泥, 再加入适量的水和木薯粉一起搅拌均匀; 再加入适量的盐。

3) 搅拌好的芋泥, 再搓成一粒粒算盘的形状备用。

4) 在一个锅内将水煮开, 放入算盘子煮至浮起便是熟了; 再煮一会儿, 捞起过一过冷水备用。

5) 利用IDEAL万用锅, 冷锅下油, 开中火将蒜蓉、鱿鱼丝、肉碎和鲜冬菇粒爆香, 加入少许鸡汤和蚝油半茶匙、生抽半茶匙,黑酱油少许,胡椒粉,鸡精粉和麻油一起翻炒均匀。

6) 过后撒上少许葱花, 便可上碟。
