Chef Kam Chee Lai prepares a mouth-watering pork ribs glazed with an amazing sauce using Song-Cho Magic Quick Cook & Ideal Wok.

 Serves 4

Ingredient (A):

  • Pork Ribs 600g
  • Almond Slice 30g

 Ingredient (B):

  • Old Ginger 50g (thickly sliced)
  • Shallots 50g
  • Spring Onion 50g (cut into sections)

Marinate for Ribs:

  • Chicken Powder 5g
  • Light Soy Sauce 40g
  • Corn Flour 10g
  • Plain Flour 80g
  • Water a little

Seasoning:

  • Oyster Sauce 100g
  • Dark Soy Sauce 120g
  • Light Soy Sauce 20g
  • Chicken Powder 20g
  • Rock Sugar 170g
  • Water 360ml

Steps:

1) Marinate the chopped ribs for an hour. Steam the marinated ribs in Magic Quick Cook for 5 minutes (15 minutes for standard pressure cooker) and deep fried till golden brown, set aside.

2) Deep fried the almond slices till golden brown and set aside.

3) Add ingredients B into wok, stir-fry till fragrant. Add in the seasoning and let it simmer for 15 minutes in low heat till the sauce thickens. Sieved and set aside.

4) Add the thickened sauce into wok, add the fried pork ribs and cook till the sauce reduces.

5) Plate it and sprinkle the fried almond slices on top and it is ready to serve.

材料 A:

  • 排骨 600克
  • 杏仁片 30克

材料 B:

  • 老姜 50克 (切厚片)
  • 小红葱 50克
  • 青葱 50克 (切段)

腌料(腌制排骨调味料):

  • 鸡精粉 5克
  • 生抽 (酱清) 40克
  • 生粉 10克
  • 面粉 80克
  • 清水适量

排骨酱汁调味料:

  • 蚝油 100克
  • 老抽 (酱油) 120克
  • 生抽 (酱清) 20克
  • 鸡精粉 20克
  • 冰糖 170克
  • 清水 360毫升

做法:

1) ️将切好的排骨腌制约小时后, 用松厨魔法气压锅拿去蒸5分钟取出 (一般气压锅约15分钟), 炸至金黄色备用

2) ️将杏仁片炸至金黄色取出备用

3) ️将材料B放入锅中爆香后, 将排骨酱汁调味料一起放入锅中, 小火漫煮15分钟, 煮至酱汁浓稠, 取出过筛备用

4) ️将适量的排骨酱汁放入锅中, 加入炸好的排骨一起煮至收干酱汁即可盛入盘中

5) 把炸好的杏仁片撒放在排骨上面, 加以点缀即可
