CHEF DEMO 厨师有约: Wasabi Braised Chicken Wing (芥辣姜烧鸡翅) – Song-Cho Ideal Wok (松厨IDEAL平底万用锅)

Chef Niun Hock Leong shows us how to cook up a sizzling braised chicken wings using Song-Cho IDEAL Wok. 🙂


 Serves 3 to 4


  • Chicken wings 8 to 9 pcs
  • Ginger 25g (sliced into fine strips)
  • Garlic 1 tsp (finely chopped)
  • White sesame seeds ½ tsp
  • Red chili 1 pcs (sliced chopped)

 Chicken Wing Marinate:

  • Japanese BBQ sauce 1 tbsp
  • Salt ½ tsp
  • Sugar ½ tsp
  • Black pepper 1 tbsp


  • Japanese BBQ sauce 3 tbsp
  • Wasabi powder 2 tsp
  • Salt ½ tsp
  • Sugar 1 tsp
  • Water 100ml



1) Wash and tap dry the chicken wings and marinate for an hour.

2) Add oil into the wok before it gets heated up, add ginger strips, fry till fragrant and set aside.

3) Add garlic and red chili, fry till fragrant and add chicken wings, fry for approximately one minute.

4) Add water and let it boil before adding the seasoning, fry at medium heat till sauce reduces.

5) Add sesame seeds, mix well before plating the chicken wings; garnish with ginger strips. DONE!

  • 鸡中翅 8-9支
  • 姜丝 25克
  • 蒜蓉 1茶匙
  • 芝麻 1/2茶匙
  • 红辣椒 1条(切粒)

腌料 (腌制鸡翅调味料):

  • 日式烧肉汁 1汤匙
  • 盐 1/2茶匙
  • 糖 1/2茶匙
  • 黑胡椒 1汤匙


  • 日式烧肉汁 3汤匙
  • 青芥末粉 2茶匙
  • 盐 1/2茶匙
  • 糖 1茶匙
  • 水 100毫升



1) 鸡翅洗净,与腌料拌均匀,腌约1小时

2) 冷锅下2汤匙油, 热爆香姜丝取出备用

3) 接下来爆香蒜蓉和红辣椒粒, 然后下腌好的鸡翅煎炸翻转约1分钟, 加入水让酱汁煮滚后再下调味料,用中火炒匀至酱汁收干

4) 撒上芝麻拌匀即可上碟, 然后在鸡翅上摆上前先炸好的姜丝就完成了
