Chef Kam Chee Lai prepares a delicious yet no fuss seafood soup with pumpkin pulp using Song-Cho Soup Maker & Ideal Wok.

 Serves 6

Ingredient (A):

  • Pumpkin pulp 400g
  • Chicken stock 800ml

 Ingredient (B):

  • Tiger prawn 6 pcs (shell it leaving the tail)
  • Scallop 6pcs
  • Asparagus 6pcs
  • Small pumpkin 1pc (optional)

Seasoning:

  • Salt to taste
  • Chicken powder to taste
  • Corn starch a little (add water)

Steps:

  1. Put the pumpkin pulp and chicken stock into Soup Maker, press MENU button till PASTE and press START. It will take 25 minutes for the cooking process to complete.
  2. Add water into IDEAL wok, add a teaspoon of salt into the water, wait for the water to boil.
  3. When the water boils, add asparagus and scoop up when its cooked. Do the same for prawns and scallops (pour away the water thereafter).
  4. Lightly blanch the pumpkin container and place it on a plate.
  5. When the pumpkin soup mixture is ready, open the Soup Maker and pour the mixture into the empty wok (can keep it at a low/medium heat).
  6. Add corn starch water mixture bit by bit into the pumpkin soup mixture till it reaches a thicker consistency (as desired). Add seasoning to taste.
  7. Scoop the pumpkin soup into the pumpkin container, place a prawn, scallop and an asparagus into the container. Ready to serve.

*Alternative serving suggestion: pour the pumpkin soup mixture into a big bowl, place the prawns, scallops and asparagus into the soup.

材料A:

  • 金瓜果肉 400克
  • 清鸡汤 800毫升

材料B:

  • 老虎虾 6只 (将虾去头壳留尾)
  • 带子 6粒
  • 芦笋 6条
  • 貝貝金盅 1粒 (可不用,以普通大碗代替)

调味料:

  • 盐 少许
  • 鸡精粉 少许
  • 马铃薯粉 适量 (加入少许清水勾芡)

做法:

  1. 把金瓜肉和鸡汤加入松厨浓汤机, 按MENU至PASTE, 再按START启动, 过程需25分钟
  2.  在锅中加入水和一茶匙盐,待水滚
  3. 水滚时将芦笋加入煮熟, 捞起待用; 虾与带子也一起用热水煮熟,捞起待用 (水倒掉)
  4. 貝貝金盅用热水稍烫煮一会儿,取出摆放盘中加以点缀
  5. 金瓜泥25分钟后煮好时, 打开浓汤机将它倒入(空)锅中 (开中小火便可)
  6. 加入调味料和马铃薯粉水勾芡
  7. 最后把金瓜羹盛入金盅内, 再把带子, 虾, 芦笋放入金盅内即可

*另食用建议: 将金瓜羹倒入大碗内把虾,带子和芦笋放入即可
